Jamaican Chicken Curry

This aromatic and spicy dish is full of the heady flavours of Jamaica and is really easy and quick to make.

Jamaican Chicken Curry

Ingredients serves 2

2 Chicken Thighs chopped
1 Onion chopped
2 Tomatoes chopped
1 Tblspn Jamaican Curry Paste
1 Chopped carrot
1 chopped potato
1 cup water
1/2 cup of peas
A little oil for frying

Method

Fry the chicken pieces in the oil until sealed. Add the onion and Jamaican Curry Paste and continue to gently fry to allow the flavours from the paste to cook through. Add the rest of the ingredients except for the peas and bring to the boil. Simmer for 1 hour. Add the peas just before serving. Serve with Coconut Ting rice and salad greens. Bon appetit.
